Fresh Three Tomato Salsa. Yum!
I love fresh salsa of every kind. But my favourite is always fresh tomato salsa, this one is three times as good cause it has three different kinds of grape tomatoes.
Yup. Yummmmmmmmmmmmm. Fresh Three Tomato Salsa kind of yum.
There is nothing that compares to fresh salsa. Nothing. There is absolutely nothing in a jar that can come close in taste and texture to fresh made-on-the-spot salsa. The beauty of making it yourself is that you can use exactly the ingredients you like and nothing else. Sounds like a pretty great deal to me!
I generally make mine in small made-to-order batches, it’s still good the next day but it’s so easy to whip up a fresh batch, get the maximum punch for your taste buds, that there’s no reason to not make a fresh batch when you need some.
All you need is a small handful of ingredients. I picked up a package of tri-coloured grape tomatoes, red, yellow and orange, that were on discount at the store. A bunch of fresh cilantro, cause I don’t know about you but I can never have enough of the stuff in my fridge. Add onion, jalapeno and lime to the mix and you’ve got the makings of some great fresh three tomato salsa!
I simply dice up the grape tomatoes, the onion and jalapeno and chop the cilantro. Toss it all into a bowl and add the juice of one lime and a little salt. Sometimes I even add a little finely grated garlic, just a touch. Make sure you give it a good stir so that everything mixes up well and leave to marinate in the lime juice for 20–30 minutes before serving.
It’s one of my favourite toppings to add to fajitas, quesadillas, tacos or nachos. In fact, I like it so much I’ll pretty much put it on anything I think it will go with.
Mmmmmmm, nachooossssss. Now I’m hungry.
- tri-coloured grape tomatoes
- garlic, optional
- Dice up the grape tomatoes, onions and jalapeno to your liking.
- Chop cilantro.
- Mix all ingredients in a non-reactive bowl.
- Add fresh squeezed lime juice to your liking
- Add optional garlic if you wish.
- Stir and leave to marinate for about 20-30 minutes.
- Find something yummy to top with and enjoy!
